This cream corn casserole goes by several different names – maybe you’ve heard of it? Some people call it a Jiffy corn casserole recipe because it calls for a box of Jiffy corn muffin mix. But it’s also known as a WW corn bake because it’s Weight Watchers-friendly with only six points per serving. I’ve heard people refer to it as a corn hotdish, too!
It probably depends on where you’re from, but whatever you want to call it, it’s delicious! It’s also really easy to make. If you love corn, you are going to love this easy recipe.
If you’ve never had a corn bake, it’s sort of like a cross between creamed corn and corn bread. It’s a great side dish that you can slice and serve. It goes with so many main dishes like BBQ chicken and steaks during the summer or roast turkey or baked ham for the holidays.

Ingredients in Low-Calorie Corn Casserole Recipe
So many hot corn casserole dishes are heavy and not-so-good for us so this WW corn casserole is the perfect substitution. It’s lighter, but still has all of the great flavor like the original!
Did I mention you only need five ingredients? It’s seriously easy to make – here’s what you need:
- Corn kernels
- Canned cream-style corn
- Corn muffin mix
- Low-fat buttermilk
- Vegetable oil
Frozen or Fresh Corn?
For this recipe, you can use either. During the summer, when corn is in season, I love to use fresh. Just cut the kernels off of a cooked cob.
During the rest of the year I use frozen corn – just be sure to thaw it first.
How to Make this Easy One Bowl Recipe
Prepare a 9×13-inch baking sheet by spraying it with non-stick cooking spray.
In a large bowl, mix all of the ingredients together until combined. Pour the batter into the pan.
Bake the corn casserole for 40 minutes or until it’s golden on top and a toothpick comes out clean.
Can you freeze corn casserole?
This is a great make-ahead dish because it freezes really well. Let it fully cool and then wrap it tightly. Store it in the freezer for up to three months. To thaw, leave it at room temperature.
How long does corn casserole last in the fridge?
Keep the leftovers covered in an airtight container and they will keep well for up to five days!
This is one of my favorite side dishes because it’s so easy to make and it’s perfect all year – it goes with so many main dishes and making a healthier corn casserole means we can have it more often! I hope you give it a try soon – I think you will really like it. Enjoy!

Ingredients
- 2 cups frozen corn kernels thawed
- 1 14.75 ounce can cream-style corn
- 1 8.5 ounce box corn muffin mix
- 1 cup low-fat buttermilk
- 2 tablespoons vegetable oil
Instructions
Preheat oven to 400°F. Spray a 9×13-inch baking dish with nonstick cooking spray.
Stir together all ingredients in a large bowl. Pour into prepared pan.
Bake about 40 minutes, or until golden until a toothpick comes out clean.
