I get myself into trouble when I have days like this, because most of the time I end up making a big batch of cookies…or a whole chocolate cake. These are the days when we need portion control more than ever, and this brownie recipe is exactly that.

Why This Recipe Works So Well

This easy brownie recipe makes the perfect portion of gooey chocolate for just one person. It’s an easy recipe with simple ingredients, and it has a rich chocolate flavor. It takes care of your chocolate craving in no time!

List of Ingredients

  • 2 tablespoons all purpose flour
  • 2 tablespoons white sugar – one tablespoon of brown sugar can be substituted for one tablespoon of white sugar.
  • 1tablespooncocoa powder
  • 1 tablespoon vegetable oil or canola oil
  • 1tablespoonwater
  • 1/2teaspoonvanilla extract
  • 1-2 tablespoons semi-sweet chocolate chips – peanut butter chips, milk chocolate chips, or dark chocolate chips can be used as well.

How To Make

  • ​Whisk dry ingredients in a small bowl.
  • Add oil, water, and vanilla.
  • Stir with a spoon until smooth.
  • Spray a small ramekin or other microwave-safe bowl with non-stick spray and add the brownie batter. Make sure to scrape the bowl with a rubber spatula to get all the batter.
  • Top with chocolate chips.
  • Cook in microwave, uncovered, for 50 seconds.
  • Let cool on a wire rack for 5 minutes. Enjoy while warm.

​Helpful Tips

  • This is not a huge brownie, but it’s very rich, so it is more than enough for one person. To serve two people, make a double batch, and divide it into two ramekins. Cook them separately in the microwave.
  • I use afour ounce ramekinthat measures 3.5 inches in diameter and 1.75 inches tall.
  • You can mix and then cook the batter in the same bowl, but it tends to stick while cooking. For best results and easier clean-up, prepare in one bowl, and cook in a second bowl or cup that’s been prepared with non-stick spray.
  • You may have to adjust the bake time, but don’t overcook. Your brownie will have a crackly top, but should be gooey in the middle.
  • This easy dessert can be served warm or you can let it cool to room temperature.

Make-Ahead Version

  • In a large bowl, whisk together 1 cup all purpose flour, 1 cup white sugar, and 1/2 cup cocoa powder.
  • Store in an airtight container.
